Can I use all-purpose flour instead of spelt flour?

I have a vegan mint chocolate chip cookie recipe, which calls for 2 cups of spelt flour. Can I use all-purpose flour instead?

The texture will be different. Spelt, as I recall, is one flour that gluten-intolerant people can eat. The texture may be very different. It should, however, still be quite nice.
