Vegans Taking Second Jobs

Vegetarian options I can freeze and make later?
my second time going veg, the first time was so 2ish years so it’s not a problem for me, I only stopped because I was in high school and my dad lost his job so we didn’t have the money to get me separate food).
this time I’m just taking a generally healthier approach on life, I’m trying to cut out a lot of processed foods by making my own versions. so far I’ve made pita chips, hummus, apple chips, and black bean burgers. I can say my black bean burgers were amazing! I NEVER want to go back to premade frozen patties!
so, I’m looking for vegetarian options (doesn’t have to be vegan, but it’s certainly welcome) that I can prepare and freeze or refrigerate until I’m ready to make it. ANYTHING! it doens’t have to be a veggie version of something, it can be a completely new dish. tofu is fine with me.
also any snack suggestions are welcome
Lasagna is easy, chili (I pour the chili into bread pans, pour cornbread batter over the top uncooked and then freeze it, pop it out of the pan and wrap it really well, then when I want a two person chili with cornbread topping I put it back in the bread pan and into the oven. Yum
