what is an interesting alternative…….?
I am a chef with little experience of vegetarian cooking and run the kitchens of a very good restaurant in Lancashire County (United Kingdom). We have but a few days left to print our Christmas menus and we are still stuck with finding an interesting, tasty and yet simple alternative to Roast Turkey. Vegan/vegetarian suggestions welcome please, except Nut Roast. Seriously, that dish is so 1970s. Please leave either recipe and method, or a clear link to a recipe. Many Thanks (winner will be on the menu!)
In answer to Wilfred h’s comments, i must say that i have never said that Nut Roasts are horrible, but they do seem to be dated as an alternative at Christmas. Please do not misquote me again. thank you.
Chickpea roast! (VEGAN)
This quantity would serve 2 – 3, I guess you would prob cook the chickpeas yourself so you will have to work out that bit as I use a tin.
1 tin chickpeas
1 slice wholemeal bread made into breadcrumbs
1 small onion finely chopped
1 clove garlic
2 tbsp plain flour
half tsp baking powder
1tsp ground cumin
1 tsp ground coriander
quarter tsp cayenne pepper
4 tbsp chopped parsley
half tsp salt
black pepper
a little oil
Whizz it all up in a food processor, then place in an oiled loaf tin lined with greaseproof paper. Bake for 20 mins to half an hour at gas mark 5.
You could add some finely chopped red peppers to make it look more colourful and christmassy!
If you served this I would come to yours for christmas dinner
fed up of the stuffed mushrooms and pastry things you normally get. Obviously it can be served with all the veg, roast potatoes etc that the other people are having with their turkey. Make sure there are some roast spuds that aren’t done with the meat juices and some vegetarian gravy.
