Soy Yougart is not fermented like dairy yougarts using the acidolphilus culture, it is a natural bacteria, similar to the one used for soya sauce, a non-dairy based one, and like tofu it relies on the the proteins in the soy milk to firm up the mixture, most good health food store will have a type, or in Oriental store the starter for tofu can be used.
