Why Do Vegans Gain Weight

Recovering from anorexia and need a little help?
Hi im a 21 year old female and im recovering from anorexia. I have been suffering from it for four months and I lost too much weight and all my muscle. Im trying to gain some weight back now. Im 5″4 and weigh 95 – 100 pounds. I’ve been a vegan for a year now so I am limited to what I can eat. I have been adding hemp protein shakes to my diet, tripling my protein from tofu and peanut butter and increasing my good fats in moderation. Im not a big junk food person. I just cant seem to be gaining anything back. I’ve been trying so hard because I want my curves back and it hurts my mom to see me so skinny. I went to a nutritionist and she just told me to eat more good stuff. For example this is what I ate today
I get on average 1100-1400 calories a day. Im sendetary at the moment but I really want to start running again..can I? Why am I not gaining weight? And when I do eventually, will I look the same before I lost all the weight or will I have a different shape?
If you were going to start running I would suggest getting in 1600-1800 calories a day. If you felt tired, stop. You can do more as you gain muscle from that.
Try getting in calories from bread or grains or have a graham cracker as a snack. Drink juices like orange juice and have a banana or two every day.
Don’t worry, if you keep it up you’ll gain the right amount (not too much, not too little).
